Dr. Usha Dharmaraj Ph.D. (Food Science) is presently working at The Department of Grain Science and Technology, CSIR-Central Food Technological Research Institute, Mysore, India. She has almost 26 years of experience in the area of grain science and technology with special emphasis on processing and value addition to millets and pseudo cereals by innovative methods of both traditional and contemporary techniques. Preparation of specialty products like food for diabetics, weaning foods, beverages and functional ingredients from grains. Preparation of new and novel products based on millets namely, expanded millets, flakes from composite flour, ragi-rice, ready-to-eat snack mix, convenience mixes etc. Most of the technologies are already commercialized.
She published 23 research papers and 1 book chapter and presented her research in more than 34 national and International conferences.
